The smell of allspice is close to cloves, nutmeg and cinnamon. Thanks to the essential oil, allspice gives food a pungent taste and aroma.
Allspice is used both for desserts (Christmas pudding or biscuits) and in soups and meat dishes. It imparts a spicy aroma and greatly enhances the taste of marinades and sauces. The Aztecs added this seasoning to their chocolate.
Allspice is an excellent preservative. In the Caribbean, it is included in all spice mixes for meat and fish.
The spice is often used in the preparation of ketchup, sausages, sauces, liqueurs, jams.
