Ingredients

1 medium pumpkin

1 zucchini
-
1 eggplant
-
5 ripe tomatoes

1 red sweet pepper

3 sprigs of thyme

5 tbsp. olive oil

Pinch of salt

5 drops of liquid fermented spices 5 peppers
Directions
Cut the pumpkin, zucchini, eggplant and tomatoes into slices.
Prepare the tomato sauce for the base of the dish. In a small amount of olive oil (about two tablespoons) add one pepper and two or three tomatoes, previously cut into small cubes. Add salt and pepper to taste.
Grind the vegetables with a blender until a homogeneous mixture. Then pour the sauce into a baking tray and spread evenly on the bottom. On top of the sauce, arrange the sliced vegetables in a shape so that they alternate with each other. Fill the tray completely with vegetables.
Add three tablespoons of olive oil over the vegetables, then add three sprigs of thyme.
Cover the form with foil and put it in the oven, preheated to 180 degrees for 30-35 minutes. The vegetables should remain slightly firm.
Divide the ratatouille into plates along with the sauce. Season with the liquid spices.
